Special Balinese Nasi Jinggo Material:

400 grams of white rice
200 grams of fried noodles
Banana leaves to wrap

Serunden Material:

200 grams of coarsely grated coconut
2 bay leaves
1 cm galangal, crushed
1 teaspoon of salt
1 tablespoon of oil to saute
1 teah teaspoon of sugar

Serunden Smooth Seasoning:

5 shallots
4 curly red chili fruit
3 garlic cloves

Suwir Chicken Ingredients:

150 grams of chicken breast
1 bay leaf
1 stalk of lemongrass, taken white, crushed
½ teaspoon of salt
½ teaspoon of sugar

Shredded Chicken Smooth Seasoning:

3 curly red chilies
3 shallots
1 clove of garlic
1 large red chili
1 cm galangal
2 pecan nuts, roasted
½ cm kencur
½ cm of turmeric, burned

Sambal ingredients (puree):

3 red onions, fried
2 large red chilies, seeded, fried
1 clove of garlic, fried
1 curly red chili, seeded, fried
1 tomato, cut into pieces, fried
¼ teaspoon of shrimp paste, fried
½ teaspoon of salt
¼ teaspoon of sugar
¼ teaspoon of lime juice

How to make typical Balinese Nasi Jinggo:

Serundeng: heat oil. Stir fry the ground spices, bay leaves, and galangal till fragrant. Add coarse grated coconut and salt. Stir until half dry. Add sugar. Stir until dry.
Shredded chicken: coat chicken with fine spices, salt, granulated sugar, bay leaves, and lemongrass. Let stand 30 minutes.
Oven for 50 minutes with the temperature down 180 degrees Celsius until done. Cool it down. Coarsely shredded chicken.
Mix the shredded chicken and the chili sauce. Set it aside.
Take a banana leaf. Spoon white rice. Cover with a piece of banana leaf. Put the serundeng, shredded chicken, and fried noodles. Wrap and serve.
